Campbell River Bistro opening April 28

After a two-year hiatus, NIC’s Campbell River Bistro will be opening its doors to the public for dinner service, starting Thursday, April 28.

The Bistro is NIC’s full service, fine dining restaurant in Campbell River, served by NIC students, under the guidance and direction of NIC’s culinary faculty.

“The Bistro is an essential teaching tool for our culinary students to perfect their fine dining skills,” said Chef Xavier Bauby, NIC culinary instructor.

Students from NIC’s Culinary Business Operations certificate and diploma and Professional Cook 2 programs will be involved in the Bistro service, which runs each Thursday and Friday evening until June 17.

“We know there’s been a lot of interest in the community for when the Bistro will reopen, and we can’t thank the community enough for their support of our students,” said Bauby. “We’re so excited to welcome them back.”

The menu is currently in development and will feature a range of dishes for the students to practice their advanced cooking techniques to create a modern bistronomy experience, combining a bistro atmosphere with the culinary approach of gastronomy. It involves taking classic dishes and creating new versions utilizing the techniques of fine dining, with a focus on creativity and featuring local, seasonal ingredients.

Doors will open at 5:30, with the last seating at 7 pm each night. Seats are expected to fill quickly and reservations are strongly recommended.
