MEAL IDEAS

Blackberry Compote

This is a great way to make use of free edible berries ripening in our area.  Freeze extras on a cookie sheet to use later.  To avoid thorns, try wearing fleece and jeans while picking and step on low branches.

Ingredients:

2 cups blackberries
1 tablespoon lemon juice
2 tablespoons sugar
1 teaspoon cinnamon (optional)

 Method

  1. Place all ingredients into a pot, stir and bring to a boil
  2. Continue to stir and cook for 10 minutes
  3. Allow to cool and enjoy spread over toast, oatmeal, yogurt or cake
