NIC CULINARY STUDENTS WIN GOLD, SILVER, AND BRONZE

Culinary Medal WinnersNorth Island College Culinary Arts students, Stephanie Robinson, Bernie Calvert and Jenna Tucker, came home with medals from the BC Food Expo ‘Hot Competition’ in Vancouver. This competition, held early in March was open to culinary students from all over the province.

This year’s competition had the students working with veal striploin. Each student had a thirty minute timeline to create two entrée plates using the veal striploin as their main protein. The pressure was on for the students as they each created a unique dish in front of six judges, and an audience that had many local chefs, cooks and a large amount of enthusiastic friends, family and visitors.

Gold Medal winning dishStephanie came home with the Gold Medal for her dish - a Veal Roulade with spinach and wild mushrooms. A sweet pea coulis, gorgonzola polenta and braised Swiss chard accompanied her dish.

Jenna created an arugula and walnut pesto encrusted Veal Loin with carrot puree, wild rice waffle, mushroom ragout and Bengal spice tea foam. For this dish she was awarded the Silver Medal.

Bernie was awarded the bronze medal for her Wild Mushroom stuffed Veal wrapped in proscuitto with a shallot merlot glaze, herb couscous, fresh asparagus and banana squash puree.

All three Culinary students graduated from NIC’s program on March 13 with job opportunities lined up for them. NIC is proud to support students in this type of competition allowing them to be creative, build confidence, and observe what is happening in the food industry around the province.

“Coming home with three medals is something we are very proud of for the students, program and the college”, says NIC Chef Instructor Christine Lilyholm. “They worked very hard planning and practicing for this competition”.
