Blackberry Compote

This is a great way to make use of free edible berries ripening in our area.  Freeze extras on a cookie sheet to use later.  To avoid thorns, try wearing fleece and jeans while picking and step on low branches.

2 cups blackberries
1 tablespoon lemon juice
2 tablespoons sugar
1 teaspoon cinnamon (optional)

  1. Place all ingredients into a pot, stir and bring to a boil
  2. Continue to stir and cook for 10 minutes
  3. Allow to cool and enjoy spread over toast, oatmeal, yogurt or cake

Has an NIC instructor or staff member made a difference in your life as a student? If you would like to recognize someone’s expertise, support, or kindness that contributed to your success, please fill out our recognition form.  We will send the nominee an anonymous thank you on your behalf including your comment(s). We have received some wonderful messages which is proof that kindness counts.

Please keep in touch with us over the summer at: or our NIC Student Life Facebook or Instagram page.  We welcome your feedback!
