RECIPE IDEAS

Roasted veggies

Ingredients:

¼ cup of vegetable oil, 2 tablespoons of balsamic vinegar, 2 cloves of garlic, 1 chopped onion, a pinch of salt and pepper, and 4 cups of chopped veggies that include a combination of either soft or hard veggies.  You could pick from choices like chopped zucchini, bell peppers, cabbage, brussels sprouts, tomatoes, carrots, beets, potatoes, yams, potatoes, or parsnips. Pick four and do 1 cup of each or be creative in making your own combination with as few or as many veggies as you’d like.

Method:

Toss all ingredients in a large bowl until coated, spread on a cookie sheet and bake in the oven at 375 degrees for 30 minutes until veggies are tender and slightly brown. These warm veggies can be served with gravy or ketchup, as a side dish or sprinkled with cheese for added protein.
