Hello NIC students!

I hope you are well as this unusual and challenging term comes to an end. This is the second in our series of weekly updates with what we hope are helpful tips and ways of keeping connected during this time of social distancing.

You would have received an email last week regarding the status of the spring and summer terms. If you are unclear of the delivery format of any courses you are registered in for the 7 or 14 week spring term, please contact your instructor. If you are interested in taking courses throughout the spring and summer, please check www.nic.bc.ca for a full listing of all courses – all of which will be delivered online.

Self-Care Tips

Last week we provided tips on working from home and today we are pleased to provide you with a variety of other tips and advice to help you in maintaining overall wellness.

 Online Library Guide

NIC’s wonderful Library staff have created an online guide that showcases many electronic library resources that are available remotely for the NIC community, along with some other e-resources that may be of interest. This guide can be found at https://library.nic.bc.ca/libraryoffunthings.

As well, the Vancouver Island Regional Library is offering online card registration, 24/7 WiFi and more while their branches are closed.

If you need any support through this time, please reach out to us. You can find information on NIC’s counselling services, along with links to community supports, including 24hr crisis lines, on NIC’s Counselling page.

Student Employment Services is available to help you explore the rapidly changing world of work. They will be hosting virtual workshops and info sessions, starting Monday, April 13. Check out the event calendar at CareerCentral for more details.

Healthy Eating

 

Korean Stir-Fried Beef (can substitute protein of your choice)

 Ingredients:

2 pounds of flank steak (substitute with inside round steak, which is cheaper and just as tasty!) – cut in thin strips across the grain

2 Tbs sesame seeds

2 Tbs cooking oil

1 bunch of green onions

2 Tbs beef bouillon (powdered beef stock)

Fresh ground pepper

¼ Tsp red pepper flakes (or cayenne pepper)

4 cloves crushed garlic (substitute with 2 Tbs of pre-crushed garlic or 1 Tsp garlic powder)

¼ cup of Soy sauce

3 Tbs white sugar

1 Tsp corn starch

1 Tsp water

Directions:

Pour sesame seeds into non-stick frying pan and turn burner to medium-high heat. Toast sesame seeds until brown (be careful as they will burn quickly); set aside.

Heat oil in non-stick frying pan or wok over medium-high heat. Add sliced beef, garlic, pepper and red pepper flakes. Stir and brown meat until lightly pink.

Add beef bouillon, green onions, soy sauce, sugar and toasted sesame seeds. Stir and bring to boil.

In a small bowl mix cornstarch and water. Stir this mixture into stir-fry.

Serve with rice and your favourite vegetable (I like having steamed broccoli with it).
