Do you have a story or know a friend who has a story worth sharing with others? About their journey to North Island College. We would like to invite you to participate in our Students of NIC Campaign. Examples of previous students who have participated can be accessed here: https://www.facebook.com/pg/NorthIslandCollegeGlobal/photos/?tab=album&album_id=1430043710379182

The purpose of this campaign is to share stories of students and their journey to NIC in their own words. Normally, we would do this with an interview, which can be set up through BlueJeans. Another option would be for you to write your story out and send it to us via email to studentlife@nic.bc.ca.  The story is intended to be raw and authentic, so we don’t do much editing.

After the interview, we normally take a picture, we try to identify a good photo shot based on what comes out in your story. In this case, you might want to send a selfie somewhere that is important to you while ensuring your safety with social distancing of course. We would then share your story on North Island College Facebook and Instagram pages. Let us know if you are interested and send us an email with your story or requesting an interview through phone or BlueJeans. If you have any questions, please send us an email at studentlife@nic.bc.ca.

Self-Care

Does the cool and wet weather that we experience on Vancouver Island during the winter months effect you? Many people are affected by seasonal depression thanks to shorter days, cool temperatures, and rain-filled days. Here are some affordable ways to maintain positive mental health during the winter months:

  • 10-minute nature walk – despite the weather some fresh air and a walk in nature, even for a short period, is very beneficial
  • Invest in some warm/cozy gear – if you can stay warm while out in the elements you will be able to enjoy all nature offers, despite the weather. Local discount and thrifty stores will allow you to stay warm while on a budget
  • Care for plants – having plants in your home will brighten your day; just don’t forget to water them!
  • Meditate – meditation is a powerful tool that helps boost your emotional state. Simply google meditation techniques or check YouTube for ways to meditate.

Chicken Broccoli Casserole

Cooking Time: 1 hr 30 min

Ingredients:

  • 2 pounds broccoli (or one large package), thawed and drained
  • 4 chicken breasts, cooked and boned
  • 1 pound Velveeta cheese
  • 1 can cream of chicken soup
  • 1/2 cup mayonnaise
  • 1 package of stuffing mix
  • 3 tablespoons melted butter

Instructions

  1. Preheat oven to 450 degrees F. Bake chicken for 20-30 minutes, turning over halfway through. If desired, coat chicken in olive oil and season with salt and pepper before baking.
  2. Place the broccoli in a well greased baking dish. Cut chicken into bite size pieces and spread over the broccoli.
  3. In a bowl, mix together soup and mayonnaise. If you think the mixture seems too thick, add a little milk. Pour over the chicken.
  4. Top with thin slices of the Velveeta. Sprinkle the stuffing mix over the cheese and drizzle the melted butter over the stuffing. Cover and bake for 30 minutes, then uncover and bake for an additional 30 minutes.
